Red Cabbage with Apples
1 head of red cabbage, sliced thinly
1/2 medium yellow onion, sliced thinly and sauteed in butter
1 Cup of diced Granny Smith apples
1/2 cup red wine
1/2 cup red wine vinegar
1 cup of sugar
2 bay leaves
3 whole cloves
Salt and pepper to taste
1/4 cup cornstarch – dissolved in 1/2 cup water – add at end of cooking.
Combine all ingredients (except cornstarch and water) into a large pot. Cook on medium heat until cabbage is tender, about an hour or so.
Then combine cornstarch with warm water and slowly stir into the pot and cook until cabbage thickens.
**Just a side note, when I made this particular batch, I forgot to saute my onions, I just added them raw to the pot and added a 1/2 tbs of butter – everything turned out just fine.
