I discovered this dish a couple of months ago and I have made it several times for Charles and I.  The other night Charles was working late, and would not be home for dinner.  I didn’t feel like cooking much for myself and this was the perfect easy one person dish.

Very easy and I get to use fresh herbs from the garden – what isn’t to like.  This is Ina’s recipe  Baked herb and cheese eggs recipe.
