Makes about fourteen 1/2 – cup servings.

3 Cups fresh peaches, skinned and chopped

4 TBS freshly squeezed lemon juice

1 1/2 cups sugar

1 1/2 cups whole milk

2 3/4 cups heavy cream

1 1/2 TSP pure vanilla extract

In a small bowl, combine the peaches with the lemon juice and 1/2 cup of sugar.  Stir gently and allow the peaches to macerate in the juices for 2 hours.  Strain,

reserving juices, mash or puree about half the peaches.

In a medium mixing bowl, use a hand mixer on low-speed to combine the milk and remaining granulated sugar, until the sugar is dissolved, about 1-2 minutes.  Stir in the heavy cream, reserved peach juice, and chopped peaches, and vanilla.  Turn your ice cream machine on according to directions and proceed as instructed.  Add the rest of the chopped peaches the last 5 minutes of process.  Place in a freezer safe dish and freeze until desired firmness.

I also added about 1 TBS of fresh cinnamon – just because we like it.
